For a while now we have been reminiscing, feeling somewhat nostalgic for the early days of our work together when we had the bakery and café, the original Pane e Salute, modeled after Italian bread bakeries, pasticcerie, the quintessential caffé bar. This is where Caleb made buttery pastry, crusty bread, panini on salty foccacia and we served espresso and cappuccino, or a glass of wine. Eventually that caffé bar morphed into the osteria and our little kitchen sent out homey dishes based on cucina casareccia, homecooking paired with regional Italian wines made from indigenous Italian varieties. Some of you will remember those days too. 

When we sold the restaurant and devoted ourselves to the wine, vineyards, and winery, we kept one of our big baking ovens, the old fire engine red mixer, and the espresso machine; we knew that these talismans would some day become furture inspirations. We thought wouldn’t it be fun to do something like that again? Wouldn’t it be fun to pour bubbly wines served with cornetti filled with apricot jam? Wouldn’t it be fun to do it in the morning between 10:30 and 12:30? Wouldn't it be fun to pull coffees again off the old machine? We’ve always loved the idea of breakfast wine, and now we've found the perfect excuse.
